Caribbean Bread Pudding (Pudín de Pan)

A sweet Caribbean bread pudding provides an excellent method to utilize stale bread.

Instructions

  1. Preheat oven to 350 F and grease a 9x9 or 8x8-inch baking pan.

  2. Remove bread crusts and cut into cubes.

  3. Soak bread cubes in hot milk for 5 to 10 minutes, then mix well and strain excess milk.

  4. Dredge raisins in flour, then fold into the bread and milk mixture.

  5. Add remaining ingredients and mix well.

  6. Pour the mixture into the greased pan.

  7. Bake uncovered for 40 minutes, or until a knife inserted near the center comes out clean.
