Caribbean Beef Tripe Soup

A hearty Caribbean beef tripe soup features tender tripe, okra, plantains, and dumplings, prepared efficiently in a pressure cooker.

Instructions

  1. Heat oil in a pressure cooker. Sauté onions until translucent (2-3 min), then add 3 sprigs thyme and sauté for 1 minute.

  2. Add tripe, salt, and pepper; sauté for 4 minutes.

  3. Pour in 6 cups of water and stir. Cover the pressure cooker and cook for 45-50 minutes from the first whistle.

  4. Release pressure and open the cooker. Add peas and additional water to create a broth. Cover and cook for 5 more minutes from the first whistle.

  5. Release pressure again and open the cooker. Add pumpkin, plantains, and the remaining thyme.

  6. Cook with the cover rested on top until plantains are almost melting.

  7. Stir in okra and dumplings. Cover and cook for 6-8 minutes until dumplings are done.

  8. Adjust seasoning as needed, then stir and serve.
