Instructions

  1. Brown the stew meat in olive oil for 20 minutes over medium heat in a large pot.

  2. Add the cubanelle pepper, ajíes dulces, onion, garlic, cilantro, vinegar, oregano, tomato sauce, 1 cup water, bay leaves, and salt.

  3. Reduce heat to medium-low and simmer for 1 hour, adding more water if the sauce thickens excessively.

  4. After 1 hour, increase heat to medium, then incorporate the carrots, peas, potatoes, olives, capers, and season with salt and pepper.

  5. Once the stew begins to boil, reduce heat to low and continue cooking for 1 more hour.
