Caribbean Beef Soup Recipe

Instructions

  1. Heat oil in a pressure cooker or pot. Sauté onions for 2-3 minutes until translucent, then add 3 thyme sprigs and sauté for 1 minute.

  2. Add beef, sauté for 3 minutes until lightly browned, then stir in split peas, salt, and pepper.

  3. For pressure cooker: Add 5 cups water, stir, seal, and cook for 20-25 minutes from the first whistle. For regular pot: Add 6 cups water, bring to a boil, cover, and simmer for 30-35 minutes.

  4. Open the cooker or pot. Add sweet potatoes, plantains, carrots, and the remaining 3 thyme sprigs, adding water if needed to mostly submerge ingredients. Simmer on medium heat for 12-15 minutes until vegetables are tender.

  5. Shape dumpling dough into spinners. Add spinner dumplings and okra to the pot. Cover and cook for 6-8 minutes until the dumplings are cooked through.

  6. Adjust seasoning if needed, stir in green onions, and serve.
