Instructions

  1. Heat oil in a large pot. Sauté onions, green pepper, and garlic for 10 minutes until soft.

  2. Add beef and cook until browned on all sides.

  3. Incorporate stewed tomatoes, beef broth, sweet potatoes, white potatoes, sugar, squash, and apricots. Bring the mixture to a simmer.

  4. Cover and simmer for 1 hour over low heat. Season with salt and pepper; adjust broth consistency as desired.

  5. Simmer for an additional 30 minutes, or until beef is tender. Stir in frozen corn and continue to simmer for 5 to 10 minutes.
