Instructions

  1. Heat olive oil in a large skillet over medium heat, then sauté onions until golden brown and very soft for 15-40 minutes; cool and roughly chop.

  2. Clean mushrooms, trim stems, and finely chop them using a food processor or knife until resembling ground beef.

  3. Combine chopped mushrooms, beef, onions, eggs, panko, Parmesan, and parsley in a bowl; shape into 8 patties about 3/4-inch thick and refrigerate for one hour to firm.

  4. Lightly oil a grill pan or cast iron skillet and heat over medium-high heat. Cook patties in batches for approximately 8 minutes per side until cooked through and nicely seared.
