Caramelized Onion and Gouda Macaroni & Cheese

Instructions

  1. Preheat the oven to 350 F.

  2. Thinly slice onions, then caramelize them in olive oil and butter with salt over medium-low heat for approximately 30 minutes until soft and golden; set aside.

  3. Cook orecchiette according to package directions until al dente; drain and set aside.

  4. Melt butter in a large pot, whisk in flour, and cook for 3 minutes.

  5. Gradually whisk in milk and heat until hot, then slowly add cheeses, salt, and pepper, whisking until melted.

  6. Remove the sauce from heat, add the cooked pasta, and stir to combine.

  7. In a separate bowl, combine breadcrumbs with melted butter.

  8. Butter a 9x13-inch casserole dish, add the macaroni and cheese mixture, top with caramelized onions, and then cover with the buttered breadcrumbs.

  9. Bake for 20 minutes, or until the top is golden brown and the edges are bubbly.
