Instructions

  1. Preheat the oven to 425 F.

  2. Heat 1 tablespoon of olive oil in a large skillet over medium-low heat. Cook onion and garlic for 10 minutes until soft, reducing heat if needed.

  3. Stir in brown sugar and vinegar, then cook for 6 to 7 minutes until lightly caramelized. Remove from heat.

  4. Oil a baking dish with the remaining 1 tablespoon of olive oil. Place chicken bone-side down and season with salt and pepper.

  5. Spread the onion and garlic mixture over the chicken.

  6. Bake for 20 to 25 minutes, or until chicken reaches 165 F. Cover loosely with foil if onions darken too quickly.

  7. Let the chicken rest for 5 minutes before serving.
