Caramelized Candied Peanuts

Instructions

  1. Line a baking sheet with foil or parchment paper.

  2. In a heavy-bottomed skillet, combine peanuts, sugar, and water. Cook over medium heat, stirring constantly, until the mixture forms a thick syrup.

  3. Continue stirring for about 10 minutes until the liquid evaporates and a sandy sugar coating forms on the peanuts.

  4. Reduce heat slightly and keep stirring as the sugar melts and the syrup turns a light to medium amber color, glazing the peanuts.

  5. Remove from heat, then stir in salt and orange flower water if using.

  6. Spread the peanuts onto the prepared pan in a single layer to cool and harden completely before storing.
