Instructions

  1. Preheat the oven to 250 F and place nuts in a 9x13-inch baking pan.

  2. Combine brown sugar, corn syrup, butter, and salt in a medium saucepan over medium-high heat; stir until dissolved and bring to a slow boil.

  3. Boil the mixture for four minutes without stirring, then remove from heat. Quickly stir in baking soda and vanilla.

  4. Immediately pour the hot caramel mixture over the nuts and stir to coat thoroughly.

  5. Bake for 40 minutes, stirring every 10 minutes, then remove from oven.

  6. Scrape nuts onto a foil-lined baking sheet, separate with a fork, and cool completely at room temperature. Break up any large chunks once cool.
