Caramel Apple Pops

Instructions

  1. Prepare an ice water bath and insert candy sticks into lollipop molds.

  2. In a saucepan with a candy thermometer, combine sugar, light corn syrup, and 1/4 cup water; heat over medium-high, stirring until sugar dissolves and it boils.

  3. Boil for 10 minutes until 310 F (hard-crack stage) is reached. Submerge the saucepan in the ice water bath, swirling for 10-15 seconds, then remove.

  4. Immediately stir in apple extract, citric acid, and green food coloring.

  5. Quickly pour syrup into molds, let cool until hardened, then remove lollipops.

  6. Melt caramels in a microwave-safe bowl, stirring every 30 seconds.

  7. Dip hardened lollipops into melted caramel and place on parchment paper to set.
