Caramel Apple Pops
Homemade tart green lollipops are coated in sweet, chewy caramel for a delightful fall treat.

Instructions

Prepare an ice water bath and insert candy sticks into lollipop molds.

In a saucepan with a candy thermometer, combine sugar, light corn syrup, and 1/4 cup water; heat over medium-high, stirring until sugar dissolves and it boils.

Boil for 10 minutes until 310 F (hard-crack stage) is reached. Submerge the saucepan in the ice water bath, swirling for 10-15 seconds, then remove.

Immediately stir in apple extract, citric acid, and green food coloring.

Quickly pour syrup into molds, let cool until hardened, then remove lollipops.

Melt caramels in a microwave-safe bowl, stirring every 30 seconds.

Dip hardened lollipops into melted caramel and place on parchment paper to set.
