Instructions

  1. Preheat the oven to 175F, or set a dehydrator to 155F.

  2. Wash kumquats, slice them into 1/16 inch rounds, remove seeds, and place in a bowl.

  3. In a saucepan, simmer sugar and water over medium heat, stirring until the sugar dissolves to create a simple syrup.

  4. Pour the warm simple syrup over the kumquat slices, stir to coat, and let them sit at room temperature for 1 hour.

  5. Drain the kumquat slices, reserving the citrus-flavored syrup for other uses.

  6. Arrange the drained slices in a single layer on a parchment-lined baking sheet.

  7. Bake for 1 hour and 10 minutes, then turn each kumquat piece and bake for an additional 10 minutes.

  8. Cool completely before transferring to an airtight storage container, keeping them away from moisture and heat.
