Candied Almonds
Crunchy, golden-brown sugared almonds make a versatile treat, ideal for pastries, salads, candy mixes, or standalone snacking.

Instructions

Prepare a baking sheet with a silicone mat or foil and nonstick spray; set aside.

In a nonstick saucepan, combine water and sugar over medium-high heat. Stir until the sugar dissolves, then bring the mixture to a boil.

Add the almonds to the boiling syrup and reduce heat to medium. Stir frequently for 5 to 8 minutes until the sugar crystallizes around the almonds.

Continue stirring until the crystallized sugar remelts and caramelizes to a deep golden-brown, coating the almonds.

Pour the mixture onto the prepared baking sheet and use a fork to separate the nuts while the caramel is still liquid.

Let the almonds cool and harden at room temperature, then break them apart and serve.
