Cancha: Andean Toasted Chulpe Corn

Cancha is a homemade Andean snack, similar to corn nuts, made from maiz chulpe that pops without puffing.

Instructions

  1. Heat oil in a large, heavy-bottomed skillet over medium heat.

  2. Add cancha corn kernels and cook, shaking the pan occasionally, until popping begins.

  3. Loosely cover the pan and continue cooking, stirring frequently, for about 10 minutes until kernels stop popping and are deep golden brown.

  4. Remove from heat, toss the toasted corn with salt, and serve warm or at room temperature.

  5. Store in an airtight container.
