Instructions

Preheat oven to 350 F and prepare two baking sheets by greasing or lining with parchment paper.

Whisk together flour, baking powder, baking soda, salt, and cinnamon in a small bowl.

Cream butter and sugars, then mix in egg and coconut extract.

Gradually add dry ingredients, mixing until combined.

Fold in oats, pecans, and shredded coconut.

Drop rounded tablespoonfuls of batter onto prepared sheets and bake for 10-12 minutes.

Cool on baking sheets for 2 minutes, then transfer to a wire rack to cool completely.
