California Cumberland Sauce for the Holidays
A modern English-inspired sauce, made with red currant jelly, wine, citrus, and spices, pairs well with roast turkey, ham, or duck.

Combine currant jelly, wine, orange juice and zest, lemon juice and zest, brown sugar, mustard, cayenne, and ginger in a saucepan.

Bring the mixture to a simmer over medium heat, then reduce heat to low and simmer for 15 minutes, stirring occasionally.

Remove from heat and cool.

Season with salt and pepper to taste; serve chilled or hot.
