Calamares a la Romana

Instructions

  1. Clean squid, discarding spines, ink sacks, and heads; retain tentacles if desired. Dry thoroughly, then cut bodies into rings.

  2. Heat 1/2 inch of olive oil in a large frying pan over high heat until hot, without smoking.

  3. Combine flour and salt in a large plastic bag. Add squid rings in batches, shake to coat, and carefully place into the hot oil without crowding.

  4. Fry until the rings are golden, then remove and drain on a paper towel.

  5. Serve hot with lemon.
