Instructions

  1. Combine all ingredients to create the rub.

  2. Store any prepared rub in an airtight container for up to six months in a cool, dark place.

  3. Wear gloves when applying the rub.

  4. Pat poultry dry, then apply the rub mixture over the entire surface, including under the breast skin.

  5. Let the seasoned poultry rest, covered and refrigerated, for 1 to 2 hours.

  6. Cook the poultry as desired.
