Cajun Stuffed Bell Peppers

Instructions

  1. Preheat oven to 350 F.

  2. Chop the tomato.

  3. Bring a large pot of water with 1 tablespoon salt to a boil; add bell peppers and boil for 5 minutes, then remove and drain.

  4. Prepare the peppers by removing stems and seeds.

  5. In a large skillet, brown the ground pork and beef. Add hot water and cook until evaporated (about 5 minutes), then stir in the chopped tomato and onion and cook for 10 minutes, stirring frequently.

  6. Combine cooked rice, 1 teaspoon salt, black pepper, and white pepper into the meat mixture; remove from heat.

  7. Stuff the prepared peppers with the meat mixture.

  8. Place stuffed peppers snugly in a baking dish and bake uncovered for 30 minutes.
