Cajun Dirty Rice Recipe

A classic Cajun dirty rice combines chicken livers, ground meat, and vegetables in a savory seasoned rice dish.

Instructions

  1. Preheat the oven to 250F.

  2. Start boiling 3 1/2 cups of broth in a large saucepan.

  3. Add 3/4 pound chicken gizzards and simmer for 30 minutes.

  4. Remove gizzards, finely grind or chop them, and reserve the broth.

  5. In a Dutch oven, heat 2 tablespoons bacon drippings or oil and 2 tablespoons butter; add 1/2 pound ground pork and chopped gizzards.

  6. Cook, stirring, until browned.

  7. Reduce heat. Stir in onions, celery, green bell pepper, minced garlic, salt, black pepper, paprika, and cayenne pepper; cook until vegetables are tender (5-7 minutes).

  8. Add 1 1/2 cups long-grain white rice and reserved broth; bring to a boil.

  9. Stir, cover, reduce heat to low, and simmer for 15 minutes until rice is tender.

  10. In a skillet, melt remaining 2 tablespoons butter and sauté 1/2 pound minced chicken livers for 3 minutes.

  11. Toss chicken livers with the rice and season to taste.

  12. Cover the pan and bake in the preheated oven for 10 minutes.

  13. Fluff with a fork and serve.
