Caesar Salad

Instructions

  1. Start boiling water for 3 eggs.

  2. Cut bread into 1/2-inch cubes. Heat 2 tablespoons oil in a skillet over medium-low heat; fry bread for 4-5 minutes until crisp, then drain.

  3. In the same skillet, fry bacon until crispy; drain well.

  4. Boil eggs for 3 minutes (soft) or 6 minutes (hard); cool, peel, and quarter them.

  5. Combine egg yolks, anchovies, mustard, and garlic in a bowl. Slowly whisk in oil until thickened, then add vinegar or lemon juice, adjusting consistency with warm water if needed.

  6. Chop lettuce. In a large bowl, toss lettuce with 4-5 tablespoons of dressing, then add croutons and bacon and toss again.

  7. Divide salad among 4 serving bowls, top with quartered eggs and grated Parmesan, and serve immediately.
