Cabbage and Potato Casserole

A hearty and easy fall or winter casserole combines potatoes, cabbage, cream, and cheese, with optional bacon for a smoky flavor.

Instructions

  1. Preheat the oven to 375 F.

  2. If using, chop the sausage, bacon, or pancetta.

  3. Melt butter in a large ovenproof pan over medium heat; cook the chopped meat until browned.

  4. Meanwhile, prepare cabbage by removing outer leaves, coring, and chopping it into bite-sized pieces.

  5. Add the cabbage to the pan and cook, stirring, for 5 minutes until wilted.

  6. Peel and chop potatoes into small pieces, then add to the pan and stir. Remove the pan from heat.

  7. In a small bowl, whisk together the cream, mustard, salt, and pepper. Add this mixture to the pan and stir to combine.

  8. Cover the pan and bake for 15 to 30 minutes, until the potatoes are tender.

  9. Sprinkle the casserole with cheese, return to the oven uncovered, and cook for 10 to 15 more minutes until bubbling and browned.
