Buttery Cashew Brittle

Instructions

  1. Prepare two foil-lined baking sheets by generously buttering the foil and the sides of a large saucepan.

  2. Combine sugar, corn syrup, and water in the buttered saucepan and cook over medium heat, stirring until sugar dissolves.

  3. Once boiling, blend in 1 cup of butter; stir frequently after the syrup reaches 230 F.

  4. When the mixture reaches 280 F, incorporate the cashews.

  5. Continue stirring until the candy reaches 300 F (hard-crack stage).

  6. Remove from heat, then quickly stir in baking soda until well mixed.

  7. Pour the mixture onto the prepared baking sheets and stretch it thinner using forks as it cools.

  8. Once cooled, loosen the brittle, turn it over, break into pieces, and store in an airtight container.
