Butterscotch Chews
A rich, chewy candy with a classic butterscotch flavor and firm caramel texture is crafted from brown sugar and butter.

Instructions

Line an 8x8-inch pan with foil and spray with nonstick cooking spray.

Combine sugars, vinegar, corn syrup, water, and salt in a medium saucepan over medium-high heat, stirring until sugars dissolve.

Insert a candy thermometer and cook, without stirring, to 245 F.

Add butter at 245 F, then continue cooking and stirring frequently until the mixture reaches 255 F.

Remove from heat, add vanilla extract, and stir until incorporated.

Pour candy into the prepared pan and allow it to set at room temperature overnight, or refrigerate for 4 hours.

Once set, remove the candy block from the pan using the foil, peel off the foil, and cut into 1-inch squares.

For plain chews, wrap each piece individually to prevent stickiness.

To dip, melt chocolate in a microwave-safe bowl in 1-minute intervals, stirring after each, until smooth.

Line a baking sheet with foil. Dip each square into the melted chocolate, remove excess, and place on the lined baking sheet.

Refrigerate dipped chews for 20 minutes to set the chocolate. Let them sit at room temperature for 10 minutes before serving.

Store plain wrapped chews airtight at room temperature; store chocolate-dipped chews refrigerated for up to one week.
