Instructions

  1. Prepare butternut squash by trimming ends, peeling, deseeding, and chopping into bite-sized pieces.

  2. Finely chop garlic and grate ginger; set aside.

  3. Heat oil in a large pan over medium-high heat. Add mustard seeds, cover, and cook until they pop (about 2 minutes).

  4. Stir in garlic and ginger; cook for 1 minute until fragrant.

  5. Add squash, salt, and 1/2 cup water to the pan. Stir, cover, and cook for 15 minutes, stirring occasionally, until tender; add more water if needed to prevent sticking.
