Butternut Squash Noodles

A simple and delicious way to prepare seasonal butternut squash as spaghetti-like noodles.

Instructions

  1. Wash and separate the butternut squash neck from its bulbous bottom.

  2. Peel the squash neck and spiralize it into approximately 4 cups of spaghetti-like strands.

  3. Blot the butternut squash noodles dry with paper towels to remove excess moisture.

  4. Heat oil in a large skillet over medium-high heat, then add the noodles.

  5. Reduce heat to medium and cook the noodles, stirring occasionally, for 4 to 6 minutes until tender and lightly golden.

  6. Stir in butter until melted and the noodles are coated, then remove the skillet from heat.

  7. Toss with Parmesan cheese, adding water as needed to loosen. Season to taste with salt and pepper before serving.
