Instructions

  1. Preheat oven to 400 F (204 C).

  2. Prepare the butternut squash by removing the seeded end, stem, and thick skin, then slice the remaining neck into very thin, almost transparent rounds.

  3. Toss the squash slices with oil, if using, ensuring an even coating, then arrange them in a single layer on parchment-lined baking sheets.

  4. Bake for 20 to 35 minutes until the chips curl and are bright orange; then cool for 10 minutes to allow them to crisp.

  5. If not fully crisp after cooling, return them to the oven for 5 to 10 minutes, then sprinkle with salt, if desired.

  6. Serve immediately or store cooled chips in airtight containers.
