Buttermilk Spice Cake With Brown Sugar Frosting

Preheat the oven to 350F and prepare two 8-inch round cake pans by greasing and flouring them.

Sift together flour, baking powder, baking soda, salt, cinnamon, ginger, cloves, and nutmeg; set aside.

In a mixing bowl, beat butter until creamy. Add 1/2 cup brown sugar, granulated sugar, eggs, and vanilla extract; beat for 5 minutes until light and fluffy.

Gradually mix in the sifted dry ingredients, alternating with buttermilk, until just smooth.

Pour the batter evenly into the prepared pans. Bake for 30 minutes, or until a wooden pick inserted into the center comes out clean.

Cool cakes in pans on a rack for 5 minutes, then invert onto racks to cool completely.

For the frosting, combine egg whites, brown sugar, cold water, corn syrup, salt, and vanilla extract in the top pan of a double boiler; beat for 1 minute at high speed.

Start boiling about an inch of water in the bottom section of the double boiler. Once boiling, place the top pan over the rapidly boiling water and continue beating constantly for 7 minutes, or until stiff peaks form.

Remove frosting from heat and continue beating until it reaches a spreading consistency.

Frost the tops and sides of the completely cooled spice cake.
