Butter Rum Cookies

Instructions

  1. Preheat the oven to 350F and lightly grease 2 to 3 cookie sheets.

  2. Cream butter with 3/4 cup sugar until light and fluffy.

  3. Beat in the egg yolks, extracts, and rum.

  4. Gradually add flour while mixing, kneading the dough by hand until smooth.

  5. Shape the dough into 1 1/2-inch logs, wrap them, and chill for at least 6 hours.

  6. Cut the chilled logs into 1/4-inch slices and roll each slice into a ball.

  7. Combine the remaining 1/2 cup sugar with orange zest on a plate; roll the cookie balls in this mixture.

  8. Place cookies on the prepared sheets and flatten each with a sugar-dipped glass.

  9. Bake for 10 to 12 minutes, then transfer to a rack to cool completely.
