Instructions

  1. Preheat the oven to 375 F.

  2. Peel and cut potatoes into 3/4-inch cubes.

  3. Melt butter on a sheet pan in the oven for 2 minutes, then remove.

  4. Toss potatoes with olive oil and thyme in a bowl.

  5. Transfer potatoes to the sheet pan, toss with melted butter, spread in an even layer, and season with salt and pepper.

  6. Roast for 30 to 45 minutes, flipping after 20 minutes, until tender and browned.
