Butter Chicken
A mild Indian main dish, butter chicken features poultry simmered in a creamy sauce with curry, tomato, and onions.

Instructions

Combine chicken pieces, lemon juice, 1 tablespoon olive oil, and 2 teaspoons curry powder in a medium bowl; toss to coat, cover, and set aside.

Heat remaining olive oil and 1 tablespoon butter in a heavy skillet over medium heat.

Sauté onion, garlic, and ginger for one minute.

Add remaining curry powder and butter, stirring well.

Stir in pepper, salt, and tomato puree; mix well and simmer for 5 minutes, stirring frequently.

Add the marinated chicken pieces with their juices to the skillet.

Bring to a boil, then reduce heat and simmer for 11-15 minutes until chicken is cooked to 165 F.

Stir in heavy cream and cook for one minute.

Remove from heat and let rest for 2-5 minutes.

Serve over basmati rice.
