Butter Chicken

Instructions

  1. Combine chicken pieces, lemon juice, 1 tablespoon olive oil, and 2 teaspoons curry powder in a medium bowl; toss to coat, cover, and set aside.

  2. Heat remaining olive oil and 1 tablespoon butter in a heavy skillet over medium heat.

  3. Sauté onion, garlic, and ginger for one minute.

  4. Add remaining curry powder and butter, stirring well.

  5. Stir in pepper, salt, and tomato puree; mix well and simmer for 5 minutes, stirring frequently.

  6. Add the marinated chicken pieces with their juices to the skillet.

  7. Bring to a boil, then reduce heat and simmer for 11-15 minutes until chicken is cooked to 165 F.

  8. Stir in heavy cream and cook for one minute.

  9. Remove from heat and let rest for 2-5 minutes.

  10. Serve over basmati rice.
