Buñuelos de Viento: 'Light-as-Air Fritters'

Instructions

  1. Combine water, butter, sugar, lemon zest, and a pinch of salt in a saucepan and bring to a boil.

  2. Immediately add flour and baking powder, stirring constantly until the dough pulls away from the pan sides.

  3. Remove dough from heat, cool slightly, then mix in eggs one by one until smooth. Let the dough rest for 1.5 to 2 hours.

  4. Heat 1.5 inches of vegetable oil in a large frying pan over medium-high heat.

  5. Drop spoonfuls of dough into the hot oil, turning them until golden and floating. Remove and drain on paper towels.

  6. Sprinkle buñuelos with confectioners' sugar and serve.

  7. For a filled variation, cut cooled buñuelos in half and spoon in custard, pastry cream, or marmalade before serving.
