Bunuelos Colombianos (Colombian Cheese Fritters) Recipe

Colombian cheese fritters are prepared by deep-frying a salty fresh cheese and cornstarch dough shaped into balls.

Instructions

  1. Heat several inches of oil in a heavy pot to 325 F.

  2. Finely grate or crumble the cheeses.

  3. Combine grated cheeses, cornstarch, yuca or tapioca starch, brown sugar, baking powder, salt, eggs, and butter in a large bowl, then knead until a smooth, non-sticky dough forms; adjust consistency with extra cornstarch or milk if needed.

  4. Shape the dough into smooth balls using about 2 tablespoons for each.

  5. Fry the dough balls a few at a time for 10 to 12 minutes, or until golden brown, turning occasionally.

  6. Drain on paper towels and dust with powdered sugar if desired.

  7. Serve warm.
