Bulgarian Fried Cheese (Kashkaval Pane)

Instructions

  1. Heat 2 to 3 inches of canola oil in a skillet to 350 F.

  2. Slice 1 pound of kashkaval cheese into 1/2-inch pieces.

  3. Coat each cheese slice with flour, then beaten eggs, and finally breadcrumbs, panko, or matzo meal.

  4. Fry cheese in batches, turning once, until golden; drain on paper towels and serve immediately, garnished with parsley or lovage.
