Bukkake Udon is a simple Japanese noodle dish featuring soy sauce, dashi, and katsuobushi.

Instructions

  1. In a small pan, combine soy sauce and mirin, then boil. Stir in dashi and water until dissolved, then remove from heat and chill the sauce.

  2. Bring water to a boil, then cook udon noodles as directed on the package. Drain the noodles and rinse them quickly under cold water or cool in an ice bath.

  3. Portion the chilled noodles into bowls, add katsuobushi and any other preferred toppings, then pour the prepared sauce over them just before eating.
