Instructions

  1. Combine sugar, water, and corn syrup in a saucepan over medium-high heat, then stir until the sugar dissolves.

  2. Insert a candy thermometer and cook the mixture to 315 degrees F.

  3. Crumple a piece of parchment paper, then smooth it onto a rimmed baking sheet, ensuring some wrinkles remain.

  4. Just before the sugar reaches temperature, pour alcohol or alcohol-based flavoring onto the parchment and spread it evenly.

  5. Remove the 315-degree sugar from heat and remove the candy thermometer.

  6. Optionally, add a few drops of food coloring, stirring briefly for swirls or until fully incorporated.

  7. Tilt the baking sheet and carefully pour the sugar syrup onto the top of the parchment, allowing it to run down and bubble.

  8. Allow the bubble sugar to cool completely and undisturbed until fully set.

  9. Carefully peel the parchment from the sugar and break it into small pieces for decoration.
