Instructions

  1. Wash and halve Brussels sprouts, discarding any damaged outer leaves.

  2. In a medium saucepan, combine stewed tomatoes, bell pepper, oregano, and black pepper; season with salt as needed.

  3. Bring the mixture to a simmer over medium heat, cover, and cook for 5 minutes.

  4. Stir in the prepared Brussels sprouts, cover, and continue cooking for 10 to 15 minutes, or until the sprouts are tender.
