Instructions

  1. Line a 9x13 inch pan with foil, spray with nonstick cooking spray, then scatter chopped toasted nuts evenly on it.

  2. Combine brown sugar, water, butter, corn syrup, and salt in a medium saucepan over medium heat.

  3. Stir until the sugar and butter dissolve, wipe pan sides with a wet brush, and insert a candy thermometer.

  4. Cook without stirring until the mixture reaches 285 F (140 C), then immediately remove from heat.

  5. Stir in vanilla extract and baking soda until the toffee foams and lightens.

  6. Pour the toffee over the nuts in an even layer, avoiding excessive spreading.

  7. Cool completely at room temperature for at least 1 hour.

  8. Break the set toffee into small pieces.
