Instructions

  1. Combine sauerkraut, wine, butter, thyme, and bay leaf in a saucepan; bring to a boil, then simmer for 15 minutes, stirring occasionally.

  2. Season the sauerkraut with salt and pepper, let cool, and remove the bay leaf.

  3. In a small bowl, mix mayonnaise, mustard, chives, and parsley, then set aside.

  4. Heat the rookworst sausages.

  5. Slice the sausages diagonally, split the bread rolls, and spread them with the prepared mustard-mayonnaise.

  6. Assemble by layering sauerkraut and sliced rookworst on the rolls, then serve immediately.
