Broken Glass Candy

Instructions

  1. Prepare baking sheets by lining with a nonstick silicone mat or greased aluminum foil; use one per candy color.

  2. Combine 1/2 cup water, 3/4 cup light corn syrup, and 2 cups granulated sugar in a medium saucepan over medium heat; stir until the sugar dissolves.

  3. Use a wet pastry brush to clean sugar crystals from the pan's sides.

  4. Bring the syrup to a boil, insert a candy thermometer, and cook, stirring occasionally, until it reaches 300 F (150 C).

  5. Remove from heat, allow bubbling to cease, then rapidly mix in 2 to 4 teaspoons of flavoring extract and 1/2 teaspoon gel food coloring.

  6. Pour the candy mixture onto the prepared sheets, allowing it to form a thin layer.

  7. Cool the candy completely at room temperature for up to 2 hours until fully set.

  8. Once firm, remove the candy from the sheet and break it into small pieces.

  9. Place powdered sugar in a bag and individually coat each candy shard by shaking until covered; repeat for all colors.

  10. Serve.
