Instructions

  1. Preheat oven to 375 F.

  2. Press pastry into a pie plate, line with foil, and fill with pie weights or dried beans; partially bake for 10 minutes until lightly browned, then remove weights and cool.

  3. Steam broccoli for 3 to 5 minutes until tender, then drain thoroughly.

  4. Whisk together milk, eggs, melted butter, flour, salt, pepper, and 3/4 cup cheese until blended.

  5. Sprinkle the remaining 1/4 cup cheese over the cooled crust, then layer broccoli and mushrooms.

  6. Pour the milk and egg mixture over the layered ingredients.

  7. Bake for 35 to 45 minutes until a knife inserted into the center comes out clean.
