Broccoli Kugel
A kosher and dairy-free broccoli kugel, featuring a souffle-like texture, is prepared with frozen broccoli, eggs, mayonnaise, onion, and garlic.

Instructions

Preheat oven to 350 F and spray a 9x12 inch baking pan with nonstick spray.

Boil water, add frozen broccoli, and simmer until tender; drain and mash.

In a stand mixer, combine eggs, mayonnaise, onion, and mashed broccoli.

Add wheat flour, garlic powder, and salt; mix well.

Pour the mixture into the prepared pan and bake for 40 to 45 minutes, or until a knife inserted into its center comes out clean.
