Broccoli Chicken With Oyster Sauce Recipe

Cut chicken into 3/4- to 1-inch cubes.

Combine egg white, cornstarch, and salt in a bowl, then coat the chicken cubes and marinate in the refrigerator for 30 minutes.

While chicken marinates, prepare the sauce by mixing oyster, light soy, dark soy sauces, and water; separately, prepare a cornstarch and water thickener.

Wash and cut broccoli into thin slices and 3-4 piece flowerets; crush garlic.

Heat 2 cups of oil in a wok to 275 F. Add chicken, cook for about 30 seconds until just white, then remove and drain.

Drain the wok oil or use a clean wok. Heat 2 tablespoons of oil over medium-high heat, add crushed garlic and stir-fry for 10 seconds.

Add broccoli, salt, and sugar; stir-fry briefly. Add 1/2 cup water, cover, and cook for 4-5 minutes until tender-crisp. Remove and drain.

Clean the wok, heat 2 more tablespoons of oil. Add the cooked broccoli and velveted chicken.

Pour the prepared sauce and cornstarch mixture into the center of the wok, stir to thicken, then mix with the chicken and broccoli.

Serve hot over steamed rice.
