Broccoli Bacon Salad

A quick and delightful broccoli bacon salad combines fresh florets, crisp bacon, grapes, dried fruit, and a sweet and sour mayonnaise dressing.

Instructions

  1. Start boiling a large pot of water and prepare an ice bath.

  2. Cook frozen broccoli florets in boiling water until tender-crisp, or simmer fresh florets for 3 to 5 minutes. Transfer cooked broccoli immediately to the ice bath, then drain well and pat dry.

  3. Cook bacon in a large pan until very crisp, then drain on paper towels and crumble.

  4. Drain most bacon fat, then cook chopped onion and garlic in the same pan for 3 to 4 minutes until softened.

  5. Combine the prepared broccoli, crumbled bacon, cooked onion, and garlic in a large bowl.

  6. Add grapes and sliced almonds, then gently toss.

  7. Whisk together all remaining dressing ingredients in a small bowl.

  8. Add the dressing to the broccoli mixture, stir to coat, then cover and chill for 3 to 4 hours before serving.
