Broccoli and Cauliflower Casserole

Instructions

Preheat the oven to 450 F.

Cut broccoli and cauliflower into equal bite-sized pieces.

Bring water and 1/2 tsp salt to a boil in a large saucepan. Add vegetables and cook 4-6 minutes until crisp-tender. Drain, reserving cooking liquid, then place vegetables in a shallow 2-quart baking dish.

Combine reserved cooking liquid and milk.

Melt 3 tbsp butter in the saucepan over medium heat. Blend in flour, stirring until smooth and bubbly. Cook for 2 minutes.

Gradually stir in the liquid mixture. Cook, stirring constantly, until thickened and smooth. Season with salt, pepper, and nutmeg.

Pour sauce over vegetables and stir to coat.

Melt remaining 2 tbsp butter. Combine with breadcrumbs, Parmesan cheese, and paprika; toss and sprinkle over vegetables.

Bake for 20 minutes, or until bubbly and breadcrumbs are browned. Serve immediately.
