Broccoli and Cauliflower Casserole

Instructions

  1. Preheat the oven to 450 F.

  2. Cut broccoli and cauliflower into equal bite-sized pieces.

  3. Bring water and 1/2 tsp salt to a boil in a large saucepan. Add vegetables and cook 4-6 minutes until crisp-tender. Drain, reserving cooking liquid, then place vegetables in a shallow 2-quart baking dish.

  4. Combine reserved cooking liquid and milk.

  5. Melt 3 tbsp butter in the saucepan over medium heat. Blend in flour, stirring until smooth and bubbly. Cook for 2 minutes.

  6. Gradually stir in the liquid mixture. Cook, stirring constantly, until thickened and smooth. Season with salt, pepper, and nutmeg.

  7. Pour sauce over vegetables and stir to coat.

  8. Melt remaining 2 tbsp butter. Combine with breadcrumbs, Parmesan cheese, and paprika; toss and sprinkle over vegetables.

  9. Bake for 20 minutes, or until bubbly and breadcrumbs are browned. Serve immediately.
