British Strawberry Jelly (Jell-O)

A homemade British strawberry gelatin dessert, similar to fruit jelly, is made from fresh puréed strawberries and a simple syrup.

Instructions

  1. Start by boiling 2 cups of water with sugar in a large saucepan for 5 minutes; remove from heat and cool completely.

  2. Hull all but 4-5 fresh strawberries, then purée the hulled berries until smooth.

  3. Combine the puréed strawberries with the cooled sugar syrup, cover, and let infuse for 30 minutes to 2 hours.

  4. Strain the strawberry mixture through a fine sieve to remove any pulp or seeds.

  5. Sprinkle powdered gelatin over cold water in a small dish and let sit for 5 minutes.

  6. Heat 1 cup of the strained strawberry-sugar syrup in a small saucepan, then stir in the gelatin-water mixture and simmer gently until the gelatin dissolves, avoiding a boil.

  7. Stir this gelatin mixture into the remaining strawberry-sugar syrup.

  8. Pour the strawberry mixture into a 3-cup gelatin mold or individual molds.

  9. Refrigerate for several hours or overnight until set, then unmold by briefly dipping the mold in warm water and inverting onto a plate, garnishing with the reserved whole strawberries.
