Instructions

  1. Preheat oven to 325 F (170 C / Gas 3).

  2. In a large flameproof casserole over medium heat, melt half the butter and brown half the pork cubes for 10 minutes; remove. Repeat with remaining butter and pork.

  3. Dry-fry bacon in a separate pan until crisp, then remove. In the same pan, fry onion, celery, and shallots until soft.

  4. Combine all vegetables, bacon, and pork in the casserole. Add cider and stock, bring to a simmer, then cover and bake for 2 hours or until pork is tender, checking liquid levels periodically.

  5. Whisk cornstarch with water to form a paste, then stir into the casserole with mustard, tarragon, and crème fraîche.

  6. Cook on stovetop until sauce thickens. Serve.
