British Jammy Dodger Biscuits

Instructions

Preheat the oven to 325°F (160°C).

Combine flour, sugar, salt, and baking powder in a food processor, then add cold, chopped butter and pulse until a sandy texture is achieved.

Whisk cream, egg, egg yolk, and vanilla, then slowly incorporate into the processor with the motor running until the dough forms.

Transfer the dough to a lightly floured surface, shape into a ball, wrap, and chill for a minimum of 30 minutes.

Allow the chilled dough to come to room temperature, then roll it to 1/4-inch thickness on a heavily floured surface.

Cut out 2-inch biscuits, then create a 1/4-inch hole in the center of half of them.

Place all biscuits on a lined baking tray and bake for 10 to 12 minutes until lightly golden.

Remove from the oven and cool completely.

Spread a small amount of jam onto each whole biscuit base, then top with a holed biscuit, pressing gently to spread the jam.

Return the assembled biscuits to the oven for 5 minutes, then remove and cool once more.

Dust with icing sugar before serving.
