British Jammy Dodger Biscuits

Instructions

  1. Preheat the oven to 325°F (160°C).

  2. Combine flour, sugar, salt, and baking powder in a food processor, then add cold, chopped butter and pulse until a sandy texture is achieved.

  3. Whisk cream, egg, egg yolk, and vanilla, then slowly incorporate into the processor with the motor running until the dough forms.

  4. Transfer the dough to a lightly floured surface, shape into a ball, wrap, and chill for a minimum of 30 minutes.

  5. Allow the chilled dough to come to room temperature, then roll it to 1/4-inch thickness on a heavily floured surface.

  6. Cut out 2-inch biscuits, then create a 1/4-inch hole in the center of half of them.

  7. Place all biscuits on a lined baking tray and bake for 10 to 12 minutes until lightly golden.

  8. Remove from the oven and cool completely.

  9. Spread a small amount of jam onto each whole biscuit base, then top with a holed biscuit, pressing gently to spread the jam.

  10. Return the assembled biscuits to the oven for 5 minutes, then remove and cool once more.

  11. Dust with icing sugar before serving.
