Instructions

  1. Heat butter in a large skillet, add sliced onions, and cook until soft and lightly browned.

  2. Stir in potatoes, adding more butter if needed, and cook for 5 minutes, stirring occasionally.

  3. Pour in beef stock, bring to a boil, then reduce heat and simmer for 3 minutes.

  4. Add corned beef, Worcestershire sauce, and mustard; cook for 20 minutes, stirring gently to keep ingredients intact.

  5. Stir in frozen peas and keep the hash warm over low heat.

  6. Meanwhile, in a separate pan, heat vegetable oil and fry four eggs individually or in batches for about 3 minutes each, basting until whites are set and yolks are soft.

  7. Divide the hash among four plates, top each with a fried egg, and serve immediately with steak sauce.
