Brisket Hash and Eggs

A simple hash transforms leftover barbecue brisket into a versatile, delicious meat-lovers' treat suitable for any meal.

Instructions

  1. Heat 2 tablespoons olive oil in a large skillet over medium heat.

  2. Add onion; cook until translucent, about 3 minutes.

  3. Stir in garlic and red pepper; cook 1 minute.

  4. Add potatoes; cook 15 minutes, flipping to brown evenly.

  5. Stir in cubed brisket.

  6. Season with salt and pepper; cook 5-7 minutes until beef browns and potatoes are tender. Remove and keep warm.

  7. In a separate pan, cook eggs in the remaining tablespoon of oil to desired preference.

  8. If desired, warm barbecue sauce in a microwave for 30-60 seconds.

  9. Plate 4-5 portions of hash, top with warmed barbecue sauce (if using) and cooked eggs.
